    Turkey Parmesean Meatballs

    Recipe makes 1 serving - choose correct protein amount depending on your plan Count as 1 Protein, 1 dairy, 1 veggie and 1 starch

     6-8 ounces of ground turkey
     2 slices of 40 calorie bread toasted and finely ground
     dash of chopped onion
     dash chopped parsley
     1 tsp of Parmesan cheese
     Morton's Light Salt to taste
     pepper to taste
     1 tsp garlic garlic
     dash of fennel seeds
     1 tomato cut up and pureed
     2 oz low fat part skim shredded mozzarella

    Preheat oven to 400°F, setting rack to upper third part of oven. In a large bowl, using your hands, gently mix together first 9 ingredients. Shape into small balls and place a few inches from each other on a foil-lined baking sheet. In a small bowl puree the tomato and brush on top of each meatball.

    Bake for 15 minutes. Make sure you leave some for the second round.

    Remove meatballs from oven, spoon some sauce on top of each meatball, and cover each with a slice of cheese. Broil another 3 to 5 minutes until cheese is bubbly and golden.
