Grilled Veggies

Each ½ cup portion counts as 1 veggie serving

 ½ cup Apple Cider or White vinegar
 1 Small sweet onion
 1 Bell pepper, any color
 ½ Medium zucchini or yellow squash
 ½ Small eggplant

Preheat grill on medium for 10 minutes.

Cut all veggies into ½” pieces, and skewer.

Brush skewers with vinegar.

Grill for 10 minutes- turning every 2-3 minutes.

When veggies are fork tender, slide them off the skewer and into serving bowl.

Sprinkle with lite salt and fresh cracked black pepper and enjoy.
