Buffalo Chicken Meatballs

Makes 26 meatballs. Serving size is 6 meatballs. Each serving counts as 1 protein, 1/4 veggie, and 1/4 starch. *Please consult your program for proper protein servings.

 ¼ lb Ground chicken (boneless, skinless breast, ground by your butcher)
 ¼ Bread crumbs (make using 2 slices of light bread)
 1 Egg
  cup Finely chopped scallions
  cup Finely minced carrot
  cup Finely minced celery
 1 Clove of garlic, crushed
  cup Frank’s Hot Sauce
 Morton’s light salt and pepper to taste

Preheat oven to 400 degrees.

Combine all ingredients except hot sauce.

Form mixture into balls, approximately 1/8 of a cup in size.

Place meatballs on baking sheet and bake for 10 minutes.

Remove from over and flip meatballs- bake for an additional 5 minutes.

Pour hot sauce into large bowl. When meatballs are finished baking, immediately toss in hot sauce.
