Chicken Stew

Count each serving as: 1 protein- 2 veggies- 1 starch- 1 fat

 12 oz raw boneless - skinless chicken breast
 ½ cup raw onion large dice
 1 ½ cups raw celery large dice
 1 ½ cups raw carrots large dice
 ½ cup raw leafy green veggie chopped (Kale, collards, or spinach)
 1 cup potatoes, 1/2 inch cubes
 4 tsp olive oil
 3 cups water
 Morton's lite salt
 Pepper
 Italian Seasoning

Put water into a medium sauce pan. Add 1/8 teaspoon salt, pinch of pepper and 1/4 teaspoon of Italian seasoning and bring to a boil.

Add chicken. Lower heat to a simmer, cover and poach for 15 min.

After 15 min. remove chicken and let cool. SAVE the poaching liquid.

Add olive oil and all veggies and potatoes to a large skillet. Cook over medium until veggies and potatoes soften. About 8 min. Add all seasoning to taste.

Add poaching liquid to the veggies, slowly.

Shred or chop the chicken into small pieces. Stir in to the veggies.

Add Morton's Lite Salt and pepper to taste.

Cook for about 5 min. until you get the consistency of a stew.
