Fresh Salsa

Makes 3 cups ~1 cup of salsa counts as 1 veggie serving

 2.50 cups Ripe tomatoes, chopped
 ¼ cup Finely chopped white onion
 2 Chile peppers, mild or hot, seeded and finely chopped
 ¼ cup Chopped bell pepper
 1 Clove garlic, minced
 ¾ cup Cup finely chopped cilantro
 2 tbsp Fresh lime juice
 Light salt and pepper, to taste

Combine all ingredients and chill for at least one hour.
