Mix the following in a bowl:
¼ cup cooked black beans
¼ cup cooked brown rice
¾ cup diced tomatoes
¼ cup diced red onion, jalapeno, and/or yellow or orange peppers
Sprinkle on minced garlic, chopped parsley, Morton’s lite salt and pepper to taste.
Toss with 2 tsp. olive oil and 2 tsp. red wine or apple cider vinegar.
Let stand a few minutes to let flavors meld.
