Meatloaf may be the original American comfort food. It's easy to make, goes with many different sides, and freezes well. And it is delicious!
This whole meal makes 4 servings
Count as: 1 protein- 2 veggies- 1 starch- 1 fat

 16 oz quality ground beef
 7 cups green beans
 1 cup potato
 2 garlic cloves minced
 ½ cup onionminced
 ½ cup bell pepperminced
 12 Saltine'sUnsalted
 ¼ tsp Morton's Lite Salt
 ¼ tsp ground pepper
 ¼ tsp ground cumin
 2 tsp butter

Pre-heat oven to 400 degrees.

Put ground beef in large bowl.

Add in the onions, peppers, and crackers.

Add in salt, pepper, cumin and 1 minced clove of garlic.

Gently mix thoroughly.

Mold the meatloaf on a tinfoil lined baking sheet. Try to make it the size and shape of a red brick. Try not to pack it down too hard.

Add your potato to the pan and let it cook next to the meatloaf.

Cook about 1 hour until the internal temp of the meatloaf is 165 degrees.

Let the meatloaf rest for ten minutes before serving. Cut into 4 equal slices, 1 slice per serving.

Green Beans

Boil 8 cups water in a large size sauce pan with some salt.

Add in 7 cups green beans per serving and cook for 5 minutes.

Drain water after 5 minutes and add 4 teaspoon butter and 1 clove minced garlic.

Add salt and pepper to taste.

Cook over medium heat until green beans are tender. About 5 minutes.

To serve, plate one slice of the meatloaf, 1/4 cup of the potatoes, and 1 cup of green beans. Top the potato with a teaspoon of butter and feel free to use up to 2 teaspoons of yellow or spicy brown mustard on the meatloaf.
