Count each serving as 1 protein, 1 starch

Mix up brine in shallow baking dish. Place chicken breasts in brine and allow to soak for an hour to an hour and a half. Remove chicken from brine and dry excess brine with paper towel. Cut chicken into small nugget sized pieces.
Toast bread and put in food processor to make breadcrumbs. Make sure breadcrumbs are very fine. Season with light salt and pepper. Dip chicken in egg white wash and coat in breadcrumbs. Brown in large frying pan with cooking spray (just enough to get the breadcrumbs crispy on both sides). Place on baking sheet and bake at 425 for 10 minutes.
