This dish in Italian is "Pesce all’Acqua Pazza" which translates to "Fish in Crazy Water". You really can't make this stuff up! The fish and the cherry tomatoes are key here. Get the freshest that you can. If you have a farmers market nearby and the tomatoes are in season, get them. You will be amazed at the results. As far as the fish is concerned, I used cod, but any white fish will work. Grouper, halibut, sole, sea bass and flounder are just a few examples. Use your favorite or try something new. But get the freshest that you can find.

 12 oz White FishI used cod
 3 cups Cherry tomatoes - very ripehalved
 4 tsp Olive oil
 ½ cup Cooked brown rice
 ½ cup Celerycut into matchsticks
 ½ cup Carrotscut into matchsticks
 2 cups Water
 2 Garlic cloves minced
 Morton’s Lite Salt to taste
 Fresh ground pepper to taste
 3 tbsp Parsleychopped
 Red pepper flakesoptional

Place a medium to large skillet with a lid over med-hi heat. When hot add oil and all prepared veggies.

Stir for 5 minutes and add garlic. Stir for another 3 minutes.

Add water, parsley, red pepper flakes if desired, and salt and pepper. Bring to a boil. Reduce heat to med-low and cover and let simmer for 5-7 minutes until veggies are soft and tomatoes are starting to break down.

Lay your fish on top of the veggies and cover and allow to cook for 5 minutes. NOTE: I used cod, and it cooks very quickly. When you see the segments separate it is done. Other types of fish might take longer, so you will have to check on it every few minutes. Remove from heat when done.

Add 1/4 cup cooked brown rice to a plate and lay one serving of your fish next to it. Spoon half of the veggie mixture over the top and don't forget the Crazy Water. Just spoon it over everything! A squeeze of a wedge of lemon is also a nice addition.
