Shakshuka

Shakshuka is a Middle Eastern - North African dish that consists of eggs poached in a very flavorful tomato and pepper sauce. It's is very easy to make and can be made very spicy or mild depending on the spice mix used.

 4 Eggs (2 eggs per serving. Adjust for your plan)
 2 cups Chopped tomato. (very ripe)
 2 Cloves garlic minced
 1 cup Onion minced
 1 cup Red bell pepper chopped
 1 6" pita bread
 ¼ tsp Morton's Lite Salt
  tsp Ground pepper
 1 tsp Ground cumin
 1 tsp Smoked paprika
 4 tsp Olive oil
 2 cups wateruse more if needed
 2 tsp Harissa(use this for spicy version)
 2 tbsp Chopped parsley(garnish)

Heat oil in a medium size skillet over medium heat.

Add tomatoes, peppers, onion, and garlic to pan

Cook for 3-5 minutes stirring occasionally

Add in salt, pepper, cumin and smoked paprika. (ONLY ADD HARISSA IF YOU LIKE VERY SPICY FOOD!)

Add 2 cups of water and cover.

Lower heat to med. low and cook for 30 minutes stirring occasionally. Add more water as needed to keep the consistency of a tomato sauce.

Blend mixture using a stick blender until somewhat smooth. This is NOT a necessary step as a chunky mixture is just as good.

Crack 4 eggs onto mixture and cover. Lower heat to low.

Eggs should cook for about 7 minutes until the whites are set and the yolks are slightly firm.

Gently spoon 2 eggs and half of the sauce per serving.

Sprinkle chopped parsley or cilantro over eggs.

Cut pita bread into 8 triangles and serve 4 to a serving.
