Spicy Pork and Cabbage Bowl

This recipe is so easy, I wasn't sure I was going to make it a recipe of the week. But it has so much flavor and can be made in about 15 minutes. That's a winner in my book. So here it is, enjoy! Feel free to lower the cabbage size and add some shredded onion and carrots. I used to make this as a "Prep" meal. I left the cabbage raw and I would just add the cooked pork on top. I didn't use a starch when I had mine, but feel free to add 1/4 cup of cooked brown rice if you feel like it.

Spice Mix
  tsp Garlic powder
  tsp Onion powder
 ¼ tsp Morton’s Lite Salt
  tsp Ground pepper
Ingredients
 8 oz Pork loin(use 2 of your serving size)
 4 cups Green cabbage
 4 tsp Olive oil teaspoon
 ¼ cup Water
 2 tsp Hot sauce(homemade is best, but Frank's or Tabasco work as well)

Cut pork into toothpick length strips 1/4 of an inch thick.

Add 1/2 of the spice mix to the pork and mix together. Set aside for an hour or two.

Slice cabbage into thin shreds. Thinner the better.

In a large skillet, heat up oil until it shimmers. Add in pork and arrange into a single layer if possible.

Cook pork until completely cooked. It should take about 7-10 minutes over medium heat.

When done, remove pork and set aside.

Add shredded cabbage to the pan and stir. Add remaining spice mix.

Stir in water and scrub the pan bottom with the spoon.

After a minute or two, add the pork back in. Stir for another minute or two.

Add hot sauce, stir and then serve. The cabbage should still be a bit crunchy.

Divide equally into 2 servings

Count each serving as: 1 Protein - 2 veggies - 1 fat
