Zesty Bruschetta

1 cup of bruschetta counts as 1 veggie and 1 fat serving.

 4 cups Ripe plum tomatoes, chopped
 2 Cloves garlic, minced
 2 tbsp Extra virgin olive oil
 2 tsp Extra virgin olive oil
 1 tsp Apple cider vinegar
 6-8 fresh basil leaves, chopped
 ½ tsp Light salt
 ½ tsp Freshly ground black pepper, more or less to taste
 1 cup Bruschetta counts as 1 veggie and 1 fat serving.

Combine all ingredients. Chill for at least 1 hour. Enjoy!
