*Makes 8 servings. Count each serving as 1 starch and 1/2 a fat
4 cups Potatoes, peeled and cut into 1/4" slices
1 tbsp Plus 1 tsp. olive oil
Light salt and fresh cracked black pepper to taste
1 tbsp Finely chopped parsley
1 tsp Grated orange zest
1 Small garlic clove, minced

Combine first 3 ingredients in a bowl and toss. Spread potatoes in a single layer on a baking sheet at bake at 400 degrees for 15 minutes. After 15 minutes, flip potatoes and return to oven for 15 more minutes, or until tender. Sprinkle cooked potatoes with parsley, garlic and orange zest
