Here is a delicious and healthy dish that is quick to put together because there is no cooking! I used fresh basil to garnish, but dried basil or oregano will also work. The fresh basil is incredibly aromatic and is a natural pairing with the tomatoes.

 5 oz Fresh tomatoes1 cup weighs 5 oz.
 4 oz Cottage CheeseLow fat and low sodium
 4 Leaves of fresh basil
 Morton's Lite Salt
 Ground Pepper

Half 2 small tomatoes down the center and scoop out the inside. Total weight of the tomatoes after scooping should be 5oz per serving.

Place 4oz. of cottage cheese in a bowl and season with salt and pepper to taste.

Carefully fill the tomatoes with two spoons until you use up all of the cottage cheese.

Place the basil leaves on top of one another and roll into a tube shape. Carefully start to slice at one end and work your way to the other end. We are looking for thin ribbons.

Sprinkle the basil ribbons over the stuffed tomatoes.

This makes 1 Serving
