Makes 4 cups
~ 1 cup of salsa counts as 1 fruit and ½ a veggie serving
2 cups Diced fresh pineapple
1 cup Diced red pepper
0.50 cup Chopped cilantro
0.50 cup Finely chopped red onion
3 tbsp Finely chopped jalapeno pepper, stemmed and seeded
1 Clove garlic, minced
2 tbsp Fresh lime juice
Light salt, to taste

Combine all ingredients. Chill for at least 1 hour. Enjoy!
