I have been asked recently about making some slow cooker dishes. With the cold weather coming, this seems like a great idea.

Taco Seasoning Mix -- Make this first and set aside
2 tbsp Chili powder
1 tbsp Ground cuman
½ tsp Onion powder
½ tsp Garlic powder
½ tsp Dried oregano
¼ tsp Morton's Lite Salt
½ tsp Ground Pepper
1 pinch Cayenne pepper
Salsa Mix -- Mix this the night before and refrigerate
1 cup Fresh tomatoChopped fine
1 cup PeppersChopped fine (Use whatever heat level peppers you like. I use jalapenos.)
1 cup OnionChopped fine
½ cup Fresh CilantroChopped and divided in half. Save half for the slow cooker.
½ LimeJuiced
⅛ tsp Morton's Lite Salt
⅛ tsp Ground pepper
½ tsp Taco SeasoningMix from abouve
Slow Cooker Chicken Taco
24 oz Boneless, skinless chicken breast
¼ cup Water
Remaining chopped cilantro from above
¾ of the Salsa mix from above.Save the remaining to top the tacos
Remaining taco seasoning from above
4 cups Shredded lettuce, kale, or spinacheUse to top the tacos
4 - 6 inch tortilla
4 oz avacado Sliced
1Cut chicken across grain into three pieces. You will shred it after cooking.
2Add to your slow cooker bowl:
Chicken
Water
Salsa
Taco Seasoning
Cilantro
3Set to low and cook for 5 hours. If possible, stir once every hour.
4When done, shred the chicken with two forks and add back to the pot and stir. Let it sit for 5 minutes to reabsorb the flavors.
5Serve on a tortilla with shredded lettuce and avocado. Spoon some of the remaining salsa over the top.
