Preheat oven to 350°F and spray a cooking sheet with oil.
In a small bowl, beat the egg white.
In a second small bowl, combine the cashews, parsley, salt and pepper.
Dip the breast into the egg white mixture.
Place the smooth side of the breast on the nut mixture and press to adhere.
Place the breast, nut side up, on the baking sheet.
Bake for 15 minutes or until no longer pink.
Mix the honey and mustard together to make a dressing.
