Chicken Rice Soup

Makes one serving. Count as one protein, one starch, and one veggie.

Yields1 Serving
 6 oz or 8 oz of raw boneless skinless chicken breast, chopped small
 ¼ cup Prepared brown rice
 ¾ cup Raw carrots, sliced
 ¼ cup Raw onion, chopped (or you can do a combo of onion and celery to equal 1/4c)
 1 cup Water
 Dried Spinach, Oregano, Chives, Morton’s light salt and pepper to taste

Measure out raw chicken per your plan and chop into small pieces.

cook brown rice and measure out 1/4 cup

Slice carrots and chop up onion.

Combine all ingredients in a pot and bring to a boil. Lower heat to medium low and simmer for about 1/2 hr and enjoy
