What to do with leftover cooked chicken breast? Why not make a chicken salad pita? Lets bump it up a bit and make it interesting.
Put 2 cups water into a sauce pan and bring to a boil.
Add a pinch of Morton's Lite salt and pepper to the water.
Add a 6oz raw chicken breast to the water and lower to a simmer.
Cook about 15-20 minutes until chicken is cooked completely through.
Take your chicken and cut into a small dice. The smaller the better
Add to a mixing bowl.
Cut up celery and onion into a small dice and add to chicken.
Add Lite mayo and mix well
Add all spices and salt and pepper to taste.
Stuff a half of a pita pocket and enjoy a great sandwich!
