Fruits and veggies can be boring! Let's face it, eating the same fruit day after day can be tedious. So let's make 2 fruit dishes that can add some flavor to your day.
Put apples and water in a microwave safe bowl and cover with a vented lid or plastic wrap with a slit.
Heat on high for 6 minutes.
Allow to cool for 5 minutes.
Add honey, cinnamon, and nutmeg if desired.
Gently puree in a food processor or with a stick blender. If you don’t mind large skins, a potato masher works just as well. Process or mash until you have the consistency you like.
You can serve at any temperature you like.
Makes 4 servings. Weigh out each serving at 4oz.
Count as: 1 Fruit
Simply squeeze wedge of lemon over the fruit and mix together gently. Be careful of the lemon seeds. Serve chilled.
This makes 3 serving. Weigh out each serving at 4.5 oz.
Count as: 1 Fruit
Bananas are only allowed once a week.
To swap out the banana with another fruit, just use one serving of that fruit instead of the banana. Weigh the total of all the fruit and divide by 3. That becomes your serving size.
Other tasty substitutions are other berries, honeydew and melons, and cherries. Just use the appropriate serving size.
