Here is another requested recipe. The Pumpkin Spice Latte! This is a great drink on a cold Autumn day. Made with real pumpkin and fresh spices. It takes about 10 minutes to put together and you can make it ahead and reheat it if you like.
Mix together all of the spices and set aside. You will have spice mix left over.
Brew your coffee and pour it into a medium sauce pan over medium-low heat.
Add pumpkin to the pan and gently whisk until smooth.
Add honey, vanilla, and almond extracts.
Add ½ teaspoon of the pumpkin spice mix. (This mix is very strong. Start with just a half teaspoon and add more to taste if you like.)
Continue to whisk the mixture until it is smooth and hot enough. (150° - 165° is the usual temp.)
This should make 1 large mug or 2 small cups of Latte.
Spoon your milk on top and a shake of cinnamon if you like.
Count this as 1 Starch.
If desired, you can reduce the pumpkin to 1/4 cup and count it as 1/2 Starch.
