Roasted Dijon Pork Loin

 1 (3 to 4-pound) boneless pork loin
 Morton's lite salt and freshly cracked black pepper
 2 tbsp White wine vinegar
 ¾ cup Dijon mustard
 1 tbsp Freshly chopped sage
 1 tbsp Freshly chopped parsley leaves
 1 tbsp Freshly chopped chives
 1 tbsp Freshly chopped tarragon leaves
 PAM cooking spray

Preheat oven to 350 degrees.

Season pork loin with salt and pepper.

In a small bowl, combine vinegar, mustard and herbs. Reserve mustard sauce for pork.

Warm cooking spray in a large oven proof saute pan over medium/high heat. Add pork and sear on all sides. Brush seared loin with mustard sauce and roast in the preheated oven until the internal temperature reaches 145 degrees, about 20-30 minutes. Remove from oven and let rest for 15 minutes before slicing and serving.
