String Beans and Cherry Tomatoes

Here is an interesting and tasty side dish. String Beans and Cherry Tomatoes sauteed with garlic. This is another veggie dish that can be paired with many different proteins including steak, fish, pork, and chicken. I made mine with a center cut pork chop and baked potato.

 3 cups Fresh string beansFresh is better, but frozen will work also
 1 cup Cherry tomatoes
 4 tsp Olive oil
 2 Cloves of GarlicSliced thin
 ¼ tsp Dried oregano
 ¼ tsp Dried basil
 Morton's lite salt To taste
 Ground pepperTo Taste
 WaterAs needed

Trim the ends off of your string beans if using fresh. Skip this step if using frozen.

Slice the cherry tomatoes in half

Slice garlic into thin slices. Don't chop the garlic too fine as it can burn

Put a skillet over medium-low heat and add the oil and garlic. Stir for about 3-4 minutes.

Turn heat up to medium and add in the string beans and tomatoes and coat well with the oil.

Stir well for 2-3 minutes and then add about an 1/8 of a cup of water and cover. Check the string beans every 2-3 minutes until they are cooked. They should be a little crunchy, but not mushy. The tomatoes should melt into a nice light sauce. Add a little water as necessary just to keep the mixture moist.

Add in the oregano, basil, and salt and pepper to taste.

This makes 2 servings
