I admit it! I love a cold tuna wrap. I mash up 1 oz. of avocado instead of mayo, slice up some cucumbers and roll it up in a tortilla and I have a pretty simple lunch or dinner. But even I get bored with the same old wrap from time to time. So I wanted to do something different with tuna that could be done on a weeknight. This fits the bill perfectly. Easy and quick to make, you can have a complete dinner ready in less than 15 minutes.

 1 5 oz. can low sodium tuna fish
 6 Saltine type crackers -- unsalted tops
 1 tsp Mustard (no sugar added) optional
 Morton’s Lite Salt
 Ground Pepper
 Onion powder

Drain tuna

Put 6 crackers into a zip top bag and crush them until fine like breadcrumbs

Mix about ¾ of the breadcrumbs with the drained tuna

Stir tuna with mustard until fairly smooth. If not using mustard, a few teaspoons of water will work. Adjust seasoning of salt, pepper and onion powder to your taste.

Form a patty by hand or with a pastry ring.

Gently lay the patty on the remaining crushed crackers and coat both sides. A fish spatula is the perfect tool for this if you have one. You might find that making two smaller patties is easier to deal with than one.

Heat up a medium skillet on Med-High and spray it with cooking spray.

When hot, add patty to the pan and give it a shake for a few seconds to form a crust.

Cook for about 3 minutes per side. As there is nothing to cook, all you are doing is making the crust crispy.

Serve on a bed of salad with your favorite dressing and you are all set!
