Broccoli Soup With Chicken and Rice

When you need something to warm you to the bone, this soup fits the bill. Thick and hearty, tasty and healthy, you can't ask for much more than that! This is another great recipe to freeze.

 12 oz Chicken breast
 4 cups Broccoli Florets
 ½ cup Cooked brown rice
 1 Clove garlic minced
 ½ tsp Onion powder
 ¼ tsp Morton's Lite Salt
 ¼ tsp Ground pepper
 ½ tsp Dried thyme
 ½ tsp Dried rosemary
 4 cups Water

Cut broccoli into medium size pieces and add to slow cooker.

Add water, garlic and all spices to slow cooker.

Add chicken in one or two pieces to the pot. Chicken will be removed after cooking to be shredded or cut up.

Set cooker to low and cook for at least 4 hours.

Cooking is done when chicken shreds easily with a fork.

Remove chicken and shred or cut up and set aside.

Using a stick blender, blend until smooth and creamy. A regular blender can be used, but don't over-blend.

Add chicken back in and add rice.

Let soup reheat for 10 minutes. Check seasoning, and serve. Divide pot into 2 servings, about 4 cups each.
