Here is a requested recipe. Guacamole! Whether you are adding it to a fajita, or spreading it on a piece of toast, making a tasty "Guac" is always a respected skill. And it is not difficult or time consuming to make. Just a handful of ingredients and 10-15 minutes is all it takes, no cooking required. I recommend cutting up your ingredients before scooping the avocado out of its skin. Then add the lime juice and mash right away. This will keep the color green longer. We are counting this as 1 serving of fat. You can ignore the small amount of veggies in each serving which is an ounce and a half.

 ¼ cup OnionChopped Fine
 ¼ cup TomatoChopped Fine
 2 tbsp Fresh cilantroChopped Fine
 ½ Juice of half of a lime
  tsp Morton's Lite Salt
  tsp Ground pepper
  tsp Ground cuminOptional

Place your chopped onion, tomato and cilantro in a small mixing bowl.

Dealing with the avocado: If you have never dealt with an avocado before, it can be a little tricky. First cut around the avocado north to south on both sides. A pairing knife or small steak knife works well for this. Once you cut all the way around, hold each half in your hands and twist. One side will pull free and the other side will have the pit. Use a spoon to dig the pit out carefully or it can become airborne! Then scoop the avocado out from the skin and add to the bowl.

Squeeze in half of the lime. Add salt, pepper, and cilantro.

Mash with a large fork or potato masher. Some people like to leave it a little chunky and some like it smooth. It is completely up to you.

Check seasoning and chill for at least an hour and serve.

This makes 8 servings

Each serving is 1 1/2 oz. by weight
