Pre heat oven to broil.
Put an 8” – 10” OVEN SAFE frying pan over medium heat and melt the butter.
Stir in the onions, peppers and zucchini and let cook for 4-5 minutes until soft.
Scramble the eggs and add all of the spices.
Pour the egg mixture over the vegetables and stir gently for about 15 seconds
As the bottom of the eggs start to set, turn off heat and put pan on middle rack in oven.
The top of the eggs will set in 1- 3 minutes. Remove when set. This happens very QUICKLY. Remember, the handle of the pan will be very hot.
Cool for 5 minutes and then serve. Serves 2
