Red Beans and Rice is a southern favorite that is easy to make and is loaded with flavor. The Creole seasoning can be used on many different foods including shrimp, chicken, steaks and fish. I even add it to my scrambled eggs now and again.
Mix spice mix together. There will be extra.
Heat a skillet or your insta-pot and add oil.
Saute the peppers, onions, and celery for 5 minutes
Add 2 tablespoons of the Creole spice mix, stir and cook for 2 more minutes.
Add 1 cup of red beans and stir.
Add 3 cups water.
Set pressure cooker for 55 minutes. If using a slow cooker, cook for 3 hours and check beans for doneness. Add hot sauce if desired.
When done, you can serve 3 basic ways; as is, slightly blended, or smooth. I slightly blended mine with my stick blender.
Serve 1.5 cups over 1/4 cup of brown rice
Garnish with sliced green onions and a sprinkle of creole seasoning.
