Red Beans and Rice is a southern favorite that is easy to make and is loaded with flavor. The Creole seasoning can be used on many different foods including shrimp, chicken, steaks and fish. I even add it to my scrambled eggs now and again.

Creole Seasoning
 1 tbsp Garlic powder
 1 tbsp Onion powder
 1 tbsp Smoked paprika
 1 tbsp Paprika
 1 tsp Thyme
 1 tsp Oregano
 1 tsp Basil
 1 tsp Cerery seed
 1 tsp Cayenne pepper (optional)
 1 tsp Morton's Lite Salt
 1 tsp Ground black pepper
Ingredients
 1 cup Dried red beans
 1 cup Bell pepperchopped fine
 1.50 cups Yellow onionchopped fine
 1 cup Celerychopped fine
 ½ cup Green onionsliced- save some for garnish
 1 cup Brown ricecooked
 8 tsp Olive oil
 1 Louisiana style hot sauce (optional)(optional) Use to taste
 3 cups Water

Mix spice mix together. There will be extra.

Heat a skillet or your insta-pot and add oil.

Saute the peppers, onions, and celery for 5 minutes

Add 2 tablespoons of the Creole spice mix, stir and cook for 2 more minutes.

Add 1 cup of red beans and stir.

Add 3 cups water.

Set pressure cooker for 55 minutes. If using a slow cooker, cook for 3 hours and check beans for doneness. Add hot sauce if desired.

When done, you can serve 3 basic ways; as is, slightly blended, or smooth. I slightly blended mine with my stick blender.

Serve 1.5 cups over 1/4 cup of brown rice

Garnish with sliced green onions and a sprinkle of creole seasoning.
