Spinach Salad

I love a simple spinach salad. Fresh spinach is one of my favorite vegetables. It's incredibly healthy, can be eaten cooked or raw, and is relatively inexpensive. I made this recipe with hard boiled eggs, but tuna, chicken or shrimp work just as well. I used the chili lime dressing, but any of them can be used. Have fun trying different ways to prepare this dish.

 2 Hard boiled eggs
 2 cups raw spinach

Steam 2 large eggs for 13 minutes

Remove eggs and drop into an ice water bath for 10 minutes.

Peel eggs and cut into slices like coins. Egg slicers work great for this.

Assemble in this order; Spinach, eggs, dressing, and croutons last. (this will keep croutons crunchy)

Serve and enjoy!
