I have had a few requests for some Pizza. I tried a few different recipes and they were simply not good. The problem is the crust. It just didn't turn out right. So I decided to just use toasted bread as a crust and the results were much better. You can experiment with different topping; peppers and onions, ground beef or pork and spinach come to mind. If using a veggie, remember to count the tomato sauce as 1/2 of a veggie. If you want to use ground beef or pork, cut back the cottage cheese to 2 oz. by weight and use 2 oz. of beef or pork.

Start by toasting 2 slices of bread. You want them to be a little more than medium.

Using a fork, stir into the cottage cheese some salt, pepper, the garlic, and some basil and oregano. Stir well to break up the curds as much as possible.

Spoon the cheese onto both pieces of bread and smooth over with a butter knife. It is important to put the cheese on before the sauce. This will keep the crust crispy.

Add sauce to both pizzas and gently spread it across the cheese. If adding toppings, this is the time to add them.

Add a touch of basil and oregano if desired.

Put your pizzas on a pan and under the broiler. A toaster oven with a broil feature works great, but a regular oven works just as well. DON'T walk away! This should only take 4-6 minutes and can go from hot and bubbly to burned and ruined very quickly. It could take a bit longer depending on your oven, but keep a close eye on it.

I served it with a cup and a half of salad with 2 teaspoons of olive oil and vinegar to complete my meal.
